 Some glaring errors ..Mar 06, 2010
This book was a disappointment in the sense that I found some glaring errors among recipes that have been made too simple. For example, check out the recipe for mashed potatoes. The book calls for 2 cups of milk. IF you used that much milk, you would have Mush Potatoes instead of Mashed Potatoes.

I would have chosen the video review but do not know how to use it.
Being French, I have the "je sais cuisiner" in french. My mother got hers from her mother who handed it over to me. Just like many French woman of my generation. I do have a large collection of cook books, however I always go back to my Ginette Mathiot and I have never failed her recipes. Her recipes are very concise, you do not have to read pages of literature before you start cooking. Her style is interesting and reflects her austere education. The book was born under the IIIrd French Republic, it received and still does a lot of praises from the best cooks of the French Gastronomy. When I found out that it had just been translated in English, I bought 4 to be passed on to my grandchildren. This is a great book.

A wonderful all-purpose French cookbookFeb 21, 2010
If I could only have 2 general cookbooks it'd be Better Homes & Gardens for American and this one for a fascinating European perspective. The design is perfect -- amusing illustrations and a pleasure actually to use because of the quality binding and paper. The recipes and kitchen ideas are very different from the American I've always known, and it was a lot of fun to discover them. And I adore its historical background, even though this is an updated edition -- I can pretend I'm living in Paris in the 1930s! Two notes -- I actually purchased the British edition, which perhaps avoids the problems Americans are mentioning with measurements (though it requires owning a decent kitchen scale). Also, I think that any problems with blandness would be due to how many foods in American big grocery stores are less flavorful than those purchased directly from farmers as is more common in France, and also the fact that French butter, salt, etc. is more flavorful -- so you do need to pay attention and taste what you come up with, and only try say a vegetable recipe when you have found fabulous vegetables.

Very disappointing. May be okay for the beginning French home chef, but not for me. Too much detail on "Fundamentals." Full of recipes few Americans would use. This was touted as being much less complicated than Julia Child. I made a few of the recipes. Sure, you can shave off a couple of hours, but Julia's versions taste better. And the book is very heavy, clumsy to use and expensive.
Save your money and stick with Julia.
I Thought I Know How To CookFeb 17, 2010
This book was a Christmas Gift for (me!) my wife. It went over very well. The photos are superb, and the recipes are very inspiring. I would buy this book again. It's a great reference, and lots of fun to page through. But... take the title seriously. You can't just open this book up and get busy, you actually have to have some background in cooking, and knowledge of similar dishes because the instructions assume that you do. Also, have an open mind - just because you think you know what "French" onion soup is, doesn't mean you have a clue. Lots of surprises to find here.
